My husband and I are a young, growing, Christian, military family. My husband is a Captain in The United States Marine Corps. I am a former Elementary school teacher. We are first time parents to a beautiful little two year old boy, with twin boys on the way! I am a stay at home Marine wife, who loves to bake, cook, sew and craft! I enjoy being a Domestic Engineer. The purpose of this blog is to document the story of our life and adventures as they take place.


We are honored to be serving our country and ask for prayer in our upcoming adventures. We have been blessed tremendously, and thank God everyday for all he has given us!

Cream Cheese Cake Bites


Today, I went to my friend's little girl's 3rd birthday party. Wow!!! Parties sure have come a long way since I was a child! Bounce Houses, Swing sets and Crafts oh my! I want to share the cutest idea with all of you. The party theme was "bugs and springtime". My girlfriend's mother in-law (Mrs. Fuentes) made these adorable ladybug cake balls for everyone!

I first heard about cake balls last Easter at an Easter Celebration with some of our Marine friends. However, I have never seen one as cute and creative as this one! The best thing about these Cake balls ( besides their fabulous taste) is that you can decorate them however you choose,and they are fun for the whole family!

I did not have the nerve to ask Mrs. Fuentes for her recipe. There are many variations to making Cake Balls. I prefer to add cream cheese to my recipe. I believe it adds a rich creamy texture. So, I will share my own. Here is the cake ball recipe I came up with last year. I call them Cream Cheese Cake Bites:

Cream Cheese Cake Bites:

Prep Time: 40 Min
Cook Time: 30 Min
Serves: 3 Dozen ( 36 people)

Ingredients:
1 (18.25 ounce) package chocolate cake mix ( Or any cake mix of your choice).
1 (16 ounce) container prepared chocolate frosting ( Or any frosting of your choice).
1 (8 ounce ) package Philadelphia Cream Cheese
1 (3 ounce) chocolate bar or chocolate chips for Coating
Directions:
1.Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is baked and done, crumble while warm into a large bowl, and stir in the whole frosting container, and cream cheese until well blended.

2.Melt chocolate chips or bar in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.

3.Use a melon baller or small scoop to form the cake mix into bite sized balls.

4. Dip the balls in chocolate using a toothpick or fork to hold them. ( at this point you may decorate the cake balls with sprinkles if you wish).

5. Place the bite sized balls on waxed paper and put them in the freezer to harden the chocolate for 15 minutes.
(Let them sit at room temperature for 5 to 10 min before serving).

I simply love this idea. I will be bookmarking this for spring when we have little friends over for our first outdoors tea party of the year. Thank you for sharing. Your blog (and the music) is lovely. Congratulations on having a son...I have 2 grown sons and they are simply wonderful. I plan to follow along...I so remember the days that I was a young Mom and military wife, at home, serving my family and my Lord. It is a high calling. Bless you!
