Chicken Salad Sandwich Recipe For A Sunday Afternoon

This morning I talked to Rich on the phone (who is in North Carolina right now). He told me he was going to Firehouse Subs with some friends for lunch. I was so JEALOUS!! I developed a strong LOVE for Firehouse Subs when we lived in the South. Not just any sub sandwich at Firehouse subs, but their chicken salad sandwich! I am in love with chicken salad sandwiches and for some reason I have had the worst craving for one today!!!! Sadly, there are no firehouse subs within a 300 mile radius of my home in California. So, I decided I would make my own. When we were living in the South I would often have my girlfriends over for chicken salad sandwiches and sweet tea. Two of my favorite Southern traditions. Well, no sweet tea today because I don't want to give the baby that much caffeine. However, I did make chicken salad sandwiches. Here is my CSS recipe, they turned out delicious!!! :)

Ingredients :
2 cups cubed, cooked chicken breasts
2 celery ribs, chopped
1/2 cup chopped green onions
1/2 cup mayonnaise
1/3 cup dried cranberries
2 teaspoons prepared mustard
3/4 teaspoon salt
1/4 teaspoon pepper
Any good bread of your choice

Directions
1.In a bowl, pull apart chicken breasts

2. Combine the above ingredients

3.Mix together well and place salad mixture on top of bread.

Now serve with fresh fruit and chips of your choice! :)

Mayonnaise
Dried Cranberries
Bread
Celery
long green onions

Blessings,
Sarah

I know this is random but I went to Firehouse tonight. I have been craving their chicken salad so bad. I sit down with my sandwich and almost cried, they have changed the recipe and the new one is awful. So upsetting :(
