Crock- Pot Lasagna and 5 Minute Coffee mug Chocolate Cake??????
Yes, it's true!
Doesn't it just sound too good to be true!!!!! Two of the worlds best things in one meal, and all you have to do is dump them in a Crock- pot and a coffee mug and vuala!! You've got an instant meal and half the work! Well, here is what you do. Yesterday I was watching Oprah and her guest was Jerry Seinfeld's wife Jessica Seinfeld. Jessica shared this wonderful Crock-Pot Lasagna recipe on the show. So, I thought why not? I'll give it a try! I ran out bought everything from the store to surprise my hubby! It turned out beyond amazing! Now, do realize this is coming from someone who is part Italian. My Mother makes THE BEST Lasagna in the world! So, of course I improvised the recipe a tiny bit. Just to add my own flare. Either way it was super easy and Rich loved it! He thought I slaved in the kitchen all day. ;)
Crock-Pot Lasagna Recipe ( From Jessica Seinfeld with a Sarah Christensen Flare)
Ingredients
~ 2 cans (14.4 ounces) crushed tomatoes
~ ( This is I added) 1 jar pasta sauce ( I used a four cheese sauce)
~ 2 T dried oregano
~ 1/2 tsp kosher salt ( I used garlic salt)
~ 1/4 tsp red pepper flakes
~ 1/4 tsp freshly ground black pepper
~ 2 containers fresh ricotta and 1 egg , me adding again)
~ 2 cups ( 8 ounces) grated mozzarella
~ 1/4th cup grated Parmesan
~ 12 lasagna noodles ( about three quarters of a 1 pound box)
~ 5 ounces ( about 6 cups) baby spinach
~(I added meat) 1lb ground turkey ( You could use ground beef and ground sausage yummy!)
Directions
* (My tip) First cook the meat. If you use meat saute meat in a saucepan till brown. Then I add the pasta sauce and season the meat with garlic salt.
In a medium bowl, combine the tomatoes, garlic, oregano, salt, red pepper and black pepper. In a separate bowl, mix the ricotta, 1 cup of the mozzarella and Parmesan.
In the bottom of a 5- to 6-quart slow cooker, spread a thin layer of the sauce ( if you use meat include the meat). Top with 3 of the noodles (breaking to fit as necessary). Spread about 1 cup of the sauce over the noodles and layer with 2 cups of the spinach and 1 1/2 cups of the cheese mixture. Repeat twice more with the noodles, sauce, spinach and cheese mixture. Top with the remaining 3 noodles, sauce and 1 cup mozzarella.
Cook on low, covered, until the noodles are tender—especially in the center of the lasagna—about 3 to 3 1/2 hours...
So yesterday my Aunt Becky sends me this wonderful recipe in the mail. I thought why not make my life easy and try them both on the same night!
Five Minute Coffee mug Cake Recipe
step 1 Supplies
microwave!
coffee mug
4 tablespoons flour - make sure you measure it right - or the cake is a lie!
4 tablespoons sugar
2 tablespoons unsweetened cocoa
2 tablespoons whisked egg - 1 egg is too much, 1 egg white is too eggy, 1 yolk is too dense, but 2 tbsp is just right!
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (I used Reese's Peanut butter and Butterscotch chips)
splash vanilla or other flavoring - try peppermint or cinnamon
For a fudgier version, omit egg!
Directions
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well..
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT ! (this can serve 2 if you want to feel slightly more virtuous).

We LOVE crock pot lasagna... my whole family says its their favorite. My recipe is just a tad different. Looks great! Love the mug cake too, adorable!!!
